In 2001, Jérémie, then a young oenologist, took over the family Domaine, which had already been active for four generations. The vineyards stretch across four distinct terroirs: Domaine de la Chauvinière, located atop the Coteaux de la Maine on the granitic soils of Château-Thébaud; Clos Les Montys on the hill overlooking the Goulaine marshes; Château de la Bretesche in the Sèvre area; and La Templerie, a well-ventilated hillside on the granites of Clisson.
By using indigenous yeasts, state-of-the-art technology, extended lees aging, and separate vinification of grapes from each specific soil type, Jérémie succeeds in capturing the purest expression of each terroir in his Muscadet wines—confirming his role as one of the finest interpreters of the appellation.

The "La Bretesche" vineyard is situated on the southern slopes of the Sèvre River, characterized by gneiss soils—a metamorphic rock that contributes to the wine's mineral complexity. This 13-hectare clos has a rich history, with records of viticulture dating back to 1387. The soil's composition, featuring sandy silt over a sandy-clayey subsoil, naturally yields grapes with vibrant acidity and depth.
Crafted exclusively from 100% Melon de Bourgogne grapes, the wine undergoes a gentle pneumatic pressing to preserve its delicate aromas. Fermentation occurs spontaneously in stainless steel tanks, followed by a secondary fermentation in the bottle, adhering to the traditional method. The wine is then aged on its lees for 24 months, enhancing its complexity and texture.
In the glass, the Crémant presents a pale straw-yellow hue with a fine and persistent perlage. The nose is delicate, offering aromas of white flowers and yellow fruits, complemented by subtle hints of anise, lemon zest, and a touch of iodine. On the palate, it is crisp and well-balanced, showcasing a harmonious blend of freshness and minerality, leading to a long, elegant finish.
